Ingredient List

2 slices wholemeal bread
1 avocado
¼ cup (50g) feta cheese, crumbled
¼ pomegranate, seeds
Mint leaves, to garnish

Directions

Toast the bread to your liking.
Scoop out the avocado, mash it with a fork, and season with salt and pepper.
Divide the mashed avocado between the slices of toast.
Crumble the feta cheese over the top, sprinkle with pomegranate seeds, and garnish with fresh mint leaves.
