Breakfast Oat Cookies
Ingredient List
1 cup (90g) rolled oats
⅓ cup (30g) almond meal
3 tbsp. desiccated coconut
1 tsp. cinnamon
¼ tsp. baking soda
3 tbsp. almond butter
3 tbsp. maple syrup
1 medium ripe banana, mashed
1 handful of fresh berries
Directions
Preheat the oven: Heat to 320°F (160°C) and line a baking tray with parchment paper.
Mix the ingredients: In a medium bowl, combine the oats, almond meal, desiccated coconut, cinnamon, baking soda, almond butter, maple syrup, and mashed banana. Mix until well combined, then place the bowl in the freezer for 10-15 minutes to firm up.
Shape the cookies: With slightly wet hands, roll the mixture into 9 balls, place them on the tray, and flatten into cookie shapes. Press a few berries gently onto each cookie.
Bake and cool: Bake for 20 minutes until golden. Let them cool completely before enjoying.
Serve with a cup of coffee or tea for a wholesome, feel-good breakfast.
