Coconut-Banana Millet Custard
Ingredient List
⅓ cup (75g) raw millet
1 cup (240ml) coconut milk
1 tbsp. honey
1 banana
1 tbsp. lemon juice
Directions
Rinse the millet thoroughly in hot water. Bring to a boil with ½ cup of coconut milk and ¼ cup of water. Simmer for about 15 minutes, until the liquid is completely absorbed.
Place the softened millet in a blender or food processor. Add the remaining coconut milk, honey, peeled banana, and lemon juice. Blend until silky smooth (1–2 minutes on high speed).
For an ultra-smooth texture, blend a little longer—patience pays off here.
Serve warm for comfort or chilled for a refreshing treat.
