Meatless Monday’s: Green Sushi Salad with Crispy Tofu

This bowl is a deconstructed sushi dream, layered with fluffy sushi rice tossed in rice vinegar, crisp cucumbers, savory nori strips, and a bright, tangy seaweed salad. Add to that tender edamame and golden, pan-fried tofu that’s been kissed with sesame oil, soy sauce, and ginger, and you’ve got a dish that’s equal parts fresh and hearty.
It’s perfect for weeknights when you want something nourishing but not fussy, or for impressing friends with a meal that looks as good as it tastes. Think of it as sushi’s laid-back cousin—easygoing, flavorful, and effortlessly cool. Chopsticks optional, appetite required.
Green Sushi Salad with Crispy Tofu
Ingredient List
1 cup (250g) sushi rice
1 tbsp. rice vinegar
2 cups (375g) natural tofu
1 tbsp. sesame oil
1 inch (3 cm) ginger, grated
2 tbsp. soy sauce
4 baby cucumbers, sliced
A few slices of nori
⅝ cup (125g) seaweed salad
1 ¼ cup (200g) edamame beans
Directions
Boil the rice according to package instructions. Stir in the rice vinegar and let it cool to room temperature.
Drain the tofu, then place it in a clean tea towel over a bowl. Crumble and press out as much moisture as possible.
Heat sesame oil in a wok over medium heat. Stir fry the tofu for 5 minutes, then add ginger and soy sauce. Continue stir frying for 5–7 minutes until golden. Season with salt and pepper.
Slice the cucumbers and cut the nori into small pieces.
To assemble, divide the rice between bowls and top with tofu, cucumber, nori, seaweed salad, and edamame. Serve with extra soy sauce if desired.
