Simple Vegan Oat Cookies

Ingredient List

2 cups (180g) oats
1 cup (100g) oat flour
⅝ cup (70g) almond meal
6 tbsp. maple syrup
4 tbsp. coconut oil, melted
1 tsp. baking powder

Directions

Prepare the oven: Preheat to 360°F (180°C) and line a baking tray with baking paper.
Combine dry ingredients: In a large mixing bowl, combine the oats, oat flour, almond meal, baking powder, and a pinch of salt.
Add wet ingredients: Stir in the maple syrup and melted coconut oil, mixing until well combined.
Shape the cookies: With slightly wet hands, roll the mixture into 12 balls, place them on the baking tray, and press them down to form cookie shapes.
Bake and cool: Bake for 20 minutes or until golden brown. Allow to cool before serving.
