Meatless Monday: Apple Cake
There’s something magical about fall when you have kids.
Suddenly weekends become filled with:
apple orchard trips,
pumpkin patches,
oversized sweaters,
cider donuts,
muddy boots,
and tiny hands proudly carrying home bags of apples that somehow always end up being far more than you planned to buy.
And honestly? I wouldn’t trade it for anything.
Every year after one of our fall outings, there’s always a moment where the kitchen starts to smell like cinnamon, baked apples, or warm cake, and it instantly feels like the season officially arrived.
This Apple Cake became one of those recipes for us.
It’s simple enough to throw together on a busy afternoon, but the smell while it bakes makes it feel like something much more special. The apples soften into the cake as it cooks, creating little pockets of sweetness and warmth throughout every slice, while the coconut sugar gives the cake this rich, caramel-like flavor that feels especially cozy during colder months.
And maybe my favorite part?
It doesn’t feel overly fussy.
As a parent, I love recipes that:
use simple ingredients,
don’t create a mountain of dishes,
and still feel comforting enough to become family traditions.
This cake checks every one of those boxes.
It’s the kind of dessert you make while kids sit at the counter sneaking apple slices. The kind of cake you serve warm after coming home from the orchard with cold hands and rosy cheeks. The kind of recipe that somehow tastes even better the next morning with coffee while the house is still quiet.
Those are the recipes that stay with people.
Not because they’re perfect.
But because they become attached to memories.
And honestly, I think that’s one of the best things food can do.
