Meatless Monday: Asian Scrambled Eggs
One of the hardest parts of my weight loss journey wasn’t motivation.

Asian Scrambled Eggs
Ingredient List
3 eggs
Few drops soy sauce
Handful coriander, chopped
¼ avocado
½ tsp black sesame seeds
Optional: extra coriander for garnish
Directions
Separate the eggs
Separate the egg yolks from the whites.
In a small bowl, mix the yolks with soy sauce and chopped coriander.
Cook the egg whites
Heat a dry non-stick pan over medium heat.
Add the egg whites and cook until almost fully set.
Finish the scramble
Remove the pan briefly from the heat.
Pour in the yolk mixture and stir gently for about 30 seconds until softly scrambled.
Serve
Transfer to a plate and top with black sesame seeds and additional coriander if desired.
Serve with avocado on the side.
