Cottage Cheese, Avocado & Sun-Dried Tomato Breakfast Wrap
Ingredient List
1 ¾ cups (400g) cottage cheese
2 ripe avocados, stone removed
4 medium corn wraps
⅔ cup (100g) sun-dried tomatoes
4 handfuls fresh lettuce
Salt and pepper, to taste
Directions
Warm the wraps according to package instructions.
In a bowl, mash the avocados with a fork and season with salt and pepper. Spread the mashed avocado generously across each warm wrap.
Top with cottage cheese, then sprinkle the sun-dried tomatoes and lettuce evenly over each.
Roll the wraps up tightly and wrap each in cling film.
Chill in the fridge until you're ready to eat—or devour one immediately, we won’t judge!
