Meatless Monday: Cherry Sorbet

There are certain moments as a parent where you know what’s coming.

It’s hot outside. The kids have been running around all day. And then the question comes:

“Can we have something cold?”
“Something sweet?”

That’s exactly where this Cherry Sorbet comes in.

The first time I made it, I didn’t frame it as anything special—I just blended a few ingredients together and put it in the freezer. But when I scooped it out and handed it over, the reaction said everything.

It’s cold, smooth, and naturally sweet. The cherries bring that deep, rich flavor, balanced with a little brightness from lemon and just enough creaminess from the yogurt to round it out.

To them? It’s dessert.
To me? It’s a win.

Cherry Sorbet

Ingredient List

1¾ cups (400g) frozen pitted cherries
2 tbsp honey
1 tbsp lemon juice
4 tbsp vanilla soy yogurt
4 tbsp water
Mint leaves, to serve (optional)

Directions

Blend the base
Add frozen cherries, honey, lemon juice, yogurt, and water to a high-speed blender or food processor.
Blend until smooth and creamy.

Freeze briefly
Transfer the mixture into a freezer-proof container.
Place in the freezer for about 1 hour to firm up slightly.

Scoop and serve
Scoop the sorbet into bowls or glasses.
Top with fresh mint leaves if desired.

Enjoy immediately
Serve right away for the best texture.
