Meatless Monday’s: Green Beans & Cherry Tomato Salad

Green Beans & Cherry Tomato Salad

Ingredient List

1 lb. (450g) green beans
1 cup (150g) cherry tomatoes

Ingredient List for the Dressing

1 clove garlic, minced
⅓ cup (15g) coriander, chopped
2 tbsp. lemon juice
¼ cup (60ml) olive oil

Directions

Trim the stem ends of the green beans. Bring a large pot of water to a boil and cook the beans for 3 minutes. Drain and rinse with cold water to cool completely.
Halve the cherry tomatoes and place them in a salad bowl. Once the beans are cool, cut them into 1–2 inch pieces and add to the bowl.
To make the dressing, combine garlic, coriander, lemon juice, and olive oil in a food processor. Pulse until smooth. Season with salt and pepper to taste.
Pour the dressing over the green beans and tomatoes, mixing until well coated. Serve immediately as a salad or side dish. Store covered in the refrigerator for up to 2–3 days.
