Meatless Monday: Mushroom & Brie Omelet

This omelet is one of them.
The first time I paired mushrooms with brie, I knew I had stumbled into something special. Mushrooms bring that deep, savory earthiness that almost tastes woodsy and rich on its own, but then the brie melts into the eggs—soft, creamy, slightly buttery—and suddenly the whole dish transforms into something far greater than the sum of its parts.
And then there’s the rocket.
That peppery bite cuts through the richness just enough to keep everything balanced, adding freshness and contrast to every forkful.

The kind you make on a weekend morning when you want something comforting but still a little adventurous. It feels elegant in the way French café food often does—simple ingredients, thoughtfully paired, allowed to shine without overcomplication.
What I love most about this recipe is how approachable it is despite how impressive it tastes. There’s no elaborate technique here. No hard-to-find ingredients. Just mushrooms cooked until golden, eggs whisked until fluffy, and creamy brie folded into the center while everything is still warm.

Mushroom & Brie Omelet
Ingredient List
1 clove garlic, minced
2 cups (200g) mushrooms
8 eggs
7 oz. (200g) brie cheese, sliced
4 oz. (120g) rocket
1 tbsp olive oil
Salt & pepper, to taste
Directions
Cook the mushrooms
Heat a large non-stick frying pan over high heat with a small amount of olive oil.
Slice the mushrooms and add them to the pan with the garlic. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are golden and tender.
Transfer to a bowl and set aside.
Prepare the eggs
In a large bowl, whisk the eggs together with ¼ cup (60ml) cold water.
Season generously with salt and pepper.
Cook the omelet
Heat a small non-stick frying pan over medium-high heat with a light coating of oil.
Pour one-quarter of the egg mixture into the pan.
As the eggs begin to set, top with:
one-quarter of the mushrooms
one-quarter of the sliced brie
Cook until the omelet is just set, and the brie begins to melt.
Finish and serve
Transfer the omelet onto a serving plate and top with a handful of fresh rocket.
Serve immediately.
Repeat with the remaining ingredients to make additional omelets.
