Meatless Monday: Protein Pancakes
When I first started trying to increase my protein intake, breakfast was honestly the hardest meal for me.
Most quick breakfasts either left me hungry an hour later… or felt overly complicated to make before work, school, or the gym. I wanted something simple. Something comforting. Something that didn’t feel like I was forcing myself to “eat healthy.”
And more importantly? I wanted food that still felt fun.
That’s exactly why these Protein Pancakes became one of my favorite go-to meals.
The first thing I noticed was how ridiculously easy they are. Everything goes into one blender:
cottage cheese,
oats,
eggs,
cinnamon,
maple syrup.
That’s it.
No complicated steps.
No fancy techniques.
No protein powder overload.
Just real ingredients blended into a batter that somehow turns into fluffy, golden pancakes that actually keep you full.
And honestly, that changed the game for me.
Because once I realized healthy eating could still include pancakes, everything started feeling much more sustainable.
The cottage cheese and eggs add serious protein without making the pancakes dense or dry. The oats bring texture and staying power. Cinnamon makes the kitchen smell incredible while they cook. And the maple syrup adds just enough sweetness to make them feel comforting without going overboard.
The best part? They’re customizable.
Some mornings I top them with berries and yogurt. Other days it’s peanut butter and bananas. Sometimes chocolate chips sneak their way in too.
That flexibility makes this the kind of recipe you actually keep coming back to—not just something you try once for the novelty.

Protein Pancakes
Ingredient List
1 cup (225g) cottage cheese
1 cup (80g) rolled oats
5 eggs
2 tsp cinnamon
1 tbsp maple syrup
2 tbsp coconut oil
Directions
Blend the batter
Place all ingredients into a blender or food processor.
Blend until smooth and fully combined.
Heat the pan
Heat ¼ of the coconut oil in a large frying pan over low-medium heat.
Cook the pancakes
Pour about ¼ cup of batter per pancake into the pan.
Cook until bubbles begin forming on the surface, about 1–2 minutes.
Flip and cook for another minute until golden brown on both sides.
Repeat
Continue cooking the remaining batter, adding more coconut oil as needed.
Add toppings and serve
Top with your favorite ingredients and enjoy warm.
