Meatless Monday: Pumpkin Cake

There’s a certain feeling that arrives every fall that no other season seems to recreate.

The air gets cooler.
Sweaters come out of storage.
Kids suddenly want to jump into every pile of leaves they see.
And somehow weekends start revolving around pumpkin patches, apple cider, and bringing home far more pumpkins than anyone actually needs.

As a parent, those little traditions become some of the best parts of the season.

And for me, fall baking has always felt connected to those moments.

This Pumpkin Cake reminds me of the kind of afternoons where everyone comes home slightly cold from being outside all day, the kitchen starts warming up from the oven, and the smell of cinnamon slowly fills the house.

Honestly, that smell alone feels like fall.

What I love most about this recipe is how simple it is. There’s nothing complicated here—just a handful of ingredients transforming into something soft, fluffy, warmly spiced, and comforting enough to instantly make the whole house feel cozy.

The pumpkin puree keeps the cake incredibly moist, while the cinnamon gives it that familiar seasonal warmth everyone expects this time of year.

And because the recipe is straightforward and approachable, it’s the perfect kind of baking project for busy family weekends. Kids can help mix ingredients, lick the spoon, or stand nearby asking every five minutes:
“Is it ready yet?”

Those moments matter.

Sometimes the best recipes aren’t the fanciest ones.
They’re the recipes tied to memories:

  • pumpkin patch afternoons,

  • flour-covered countertops,

  • warm kitchens,

  • and dessert shared together after dinner while everyone’s still laughing about the day.

This cake feels exactly like that.

Simple.
Warm.
Comforting.
And made for sharing.

Pumpkin Cake

Ingredient List

3 eggs
¾ cup (150g) coconut sugar
1 cup (230g) pumpkin puree
2 tsp cinnamon
1 cup (125g) self-rising flour

Directions

Prepare the oven
Preheat the oven to 375°F (190°C).

Whip the eggs and sugar
In a large bowl, combine the eggs and coconut sugar.
Using a hand mixer, beat for about 5 minutes until the mixture becomes light, fluffy, and nearly triples in volume.

Add the pumpkin and cinnamon
Add the pumpkin puree and cinnamon.
Beat again until fully combined.

Fold in the flour
Sift the self-rising flour into the mixture.
Gently fold the flour into the batter, being careful not to deflate the eggs.

Bake
Grease an 8-inch (20cm) cake pan.
Pour the batter into the prepared pan.
Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.

Cool and serve
Allow the cake to cool before slicing.
Store leftovers in an airtight container.
Makes 8 servings.
