Meatless Monday: Strawberry Protein Chia Pudding
I’ll be honest: in our house, mornings are not the serene “family yoga followed by mindful oatmeal” scenes you see on Pinterest. No, no. We’re more of a “someone lost a sock again” household. So any breakfast that is fast, fuss-free, and doesn’t cause a debate deserves a gold medal.
This Strawberry Protein Chia Pudding? It earned that medal immediately.
The first time I blended it up, my child took one look at the bright pink color and said, “It’s like dessert! For breakfast!” And honestly? They’re not wrong. This pudding is creamy, lightly sweet, fruity, and feels like a treat — but underneath that magic is a powerhouse mix of omega-3s, fiber, and protein. That means full bellies, fewer mid-morning snack requests, and a calmer start to the day for all of us.
Even better? It takes five minutes. Five. You toss everything in a blender, stir in chia seeds, and breakfast is done. If you want to be the overachieving parent you never asked to be, you can even prep it the night before and wake up to chilled, thick, pudding perfection.
Healthy. Pretty. Fast. Kid-approved.
Honestly, it’s checking more boxes than my to-do list ever does.
Strawberry Protein Chia Pudding
Ingredient List
½ cup (100g) frozen strawberries
Scant ½ cup (100ml) milk of choice (dairy or coconut both work great)
1 tbsp. vanilla whey (or plant protein if preferred)
1 tbsp. maple syrup
Scant ⅓ cup (50g) chia seeds
Directions
In a high-speed blender or food processor, blitz together the strawberries, milk, protein powder, and maple syrup until smooth and creamy.
Stir in the chia seeds thoroughly.
Refrigerate for about 10 minutes, stirring 2–3 times to prevent clumping and ensure the pudding thickens evenly.
Enjoy immediately, or keep refrigerated for a few hours or overnight for an even thicker pudding.
Makes 2 servings.
