Meatless Monday: Sweetcorn Fritters

Sweetcorn Fritters
Ingredient List
9.8 oz. (280g) organic sweetcorn, drained
Bunch coriander, chopped
Zest of 1 lemon
1 cup (120g) buckwheat flour
¾ cup (185ml) cold water
4 tsp coconut oil
Directions
Prepare the batter
Place the sweetcorn into a large bowl.
Add chopped coriander and lemon zest. Season with salt and pepper.
Next, add the buckwheat flour and water. Mix until a smooth batter forms.
Heat the pan
Heat 2 teaspoons of coconut oil in a large non-stick frying pan over high heat.
Cook the fritters
Once the pan is hot, ladle portions of the batter into the pan.
Cook the fritters in batches of 4, using about ½ teaspoon of oil per fritter if needed.
Cook for 2–3 minutes per side until golden brown and crisp.
Serve
Serve warm with avocado and chili yogurt if desired.
