Meatless Monday: Spanish Zucchini Tortilla
Some of the best recipes in the world are built from the simplest ingredients.

The first time I tried one, I expected something closer to an omelet. What arrived instead was thick, golden, soft in the center, and layered with flavor from slowly cooked vegetables and rich olive oil. It felt rustic in the best possible way—the kind of dish you imagine being served in a tiny café tucked down a side street somewhere in Madrid.
This version adds zucchini, which brings freshness and a subtle sweetness that lightens the richness of the eggs and potatoes beautifully. As the zucchini softens into the tortilla, it almost melts into the center, creating a texture that’s creamy without needing cream.
And honestly? The flipping part is half the fun.

Spanish Zucchini Tortilla
Ingredient List
1 tbsp olive oil
1 small potato, peeled and chopped
1 small onion, chopped
½ small zucchini, thinly sliced
6 eggs
Salt & pepper, to taste
Directions
Cook the vegetables
Heat olive oil in a non-stick frying pan over medium-high heat.
Add the chopped potato and onion and cook for about 4 minutes, stirring occasionally.
Next, add the sliced zucchini and sauté for another 4 minutes, until the vegetables begin to soften and lightly caramelize.
Prepare the egg mixture
In a bowl, whisk the eggs and season generously with salt and pepper.
Transfer the cooked vegetables into the bowl and mix well.
Cook the tortilla
Using the same pan, lower the heat and pour in the egg mixture.
Spread everything evenly across the pan.
After about 3 minutes, gently run a spatula around the edges to prevent sticking.
Continue cooking for 8–10 minutes, depending on your stove and pan size.
Flip the tortilla
Place a large plate over the frying pan.
Carefully flip the tortilla onto the plate, then slide the uncooked side back into the pan.
Cook for another 5–6 minutes until fully set.
Serve
Remove from heat and allow to cool slightly before slicing.
Serve warm.
